Test Kitchen Tuesday: 2-Ingredient Pancakes
Do you eat breakfast every morning? You should! Eating a wholesome and nutritious breakfast every morning helps to recharge your body, making you more efficient the rest of the day. This habit can also help you lose weight in the long run…many studies have shown that skipping breakfast is linked to the development of obesity.
The biggest reason people skip breakfast is time. There’s just not enough time in the morning to make a healthy, filling breakfast. That’s where this recipe comes in. You get a plate full of delicious (and good for you!) pancakes without having to spend much time preparing the meal.
Even better than the super short prep time? The ingredients list! These truly are 2-ingredient pancakes. All you need is an egg and a banana.
Start by mashing the banana in a bowl with a fork or a potato masher. The riper the banana, the sweeter the pancakes will taste, but you can really make these pancakes with bananas of any degree of ripeness.
Next, crack an egg into the bowl. Just right on top of the mashed bananas.
Stir it up! Use a fork or whisk to completely combine the egg and banana. You’re done when it looks like this:
That whole process should have taken 1-2 minutes. You could also throw the ingredients in a blender or food processor and pulse until smooth.
Now it’s time to cook the pancakes! Heat coconut oil or butter in a skillet over medium heat. Pour batter into skillet in small circles (smaller pancakes are easier to flip).
Cook until you see bubbles forming and the edges start to cook. (This will not take as long as it does for typical pancakes.) Flip the pancake and cook through on the other side.
There are plenty of changes you can make to these pancakes to tailor them to your desires.
Use 2 eggs, instead of 1.
Add vanilla extract or cinnamon to the mixture for a little more flavor.
Add blueberries or chocolate chips.
Add a little baking powder (1/8 teaspoon) for fluffier pancakes.
There are also a variety of toppings to make these pancakes taste different each time you have them! Personally, I’m a big fan of spreading a tablespoon of nut butter on top of the pancakes, but you could also use maple syrup, honey, a fruit glaze (heat berries over low heat to let the juices out), or just a little bit of butter.
I KNOW THIS IS SUPPOSED TO BE PRETTY AND COOL BUT I CAN’T STOP LAUGHING BECAUSE IT LOOKS LIKE IT’S FLYING UP AND THEN IT DECIDES IT GOING TOO FAR AND TRIES TO TURN AROUND AND IT KEEPS FLOATING AWAY AND ITS SAYING ‘SHIT SHIT SHIT SHIT SHIT SHIT’
go to vogue.co.uk and type (on your keyboard) up, up, down, down, left, right, left, right, B, A and watch what happens when you keep pressing A
I’m laughing so hard right now I’m crying.
